Frozen Chocolate Dessert


1/4 cup sugar
1/2 cup water
3.5 Purdy’s Classic Dark Chocolate Bars - broken into pieces
3 egg yolks
1 1/2 cups heavy cream

Garnish:  Whipped cream, chocolate shavings

Combine sugar and water in small saucepan.  Boil for 3 minutes. 
Place chocolate pieces in blender. 
Add hot sugar water.  Blend at high speed for 6 seconds. 
Add egg yolks and blend on high speed 5 seconds or until smooth. 
Add cream and blend at high speed for another 10 seconds. 
Pour into parfait glasses and cover with foil. 
Freeze 2 - 3 hours or until firm. 
To serve, remove from freezer and place in the refrigerator for 1/2 hour to soften slightly. 
Top with whipped cream and Purdy’s chocolate shavings.
