Fruity Fig Bites


1/2 lb blanched whole almonds
1/2 lb dried figs
1 (50g) Purdy’s Classic Dark Chocolate Bar
1 1/2 tsp grated orange rind
1 cup granulatedsugar
1/2 cup water

Spread almonds on baking sheet and lightly toast in 350 degree oven for about 10 minutes, stirring occasionally. 
In a food processor or blender, finely chop almonds, figs and chocolate. 
Transfer to bowl.  Stir in orange rind.
In small heavy saucepan, heat sugar with water over medium heat, stirring until sugar has dissolved. 
Bring to a boil and cook for 3 minutes. 
Stir into ground almond mixture and mix well. 
Using 2 spoons, drop scant teaspoonfuls of mixture onto waxed paper lined tray, leaving spaces between each portion.
When cool enough to handle, shape into balls and roll in extra granulated sugar. 

Makes 4 dozen.
