Marshmallow Fudge Bites


2 cups granulated sugar
2 cups cream
4 1/2 - 50g Purdy’s Classic Milk or Dark Chocolate Bars
1/2 cup butter
1 tsp vanilla
1 cup miniature marshmallows
1 - 50g Purdy’s Classic White Chocolate Bar- melted

Blend sugar, cream, chocolate, butter and vanilla in a sauce pan. 
Bring to a boil and cook to a soft ball stage (238ºF or 114ºC). 
Melt marshmallows in a double boiler and blend into the fudge. 
Pour mixture onto a  cookie sheet (lined with parchment paper). 
As mixture cools, break off teaspoon-sized pieces and roll into balls. 
Place balls back on cookie sheet and allow to cool.
Once cool, drizzle with melted white chocolate.
Makes approx. 24 candies.
