Purdy’s Chocolate Pudding


3 tbsp milk
3/4 cup sugar
1/2 tsp salt
6 tbsp flour
1.5 Purdy’s Classic Milk or Dark Chocolate Bars - broken into pieces
3 cups evaporated milk
1 large egg, slightly beaten
1 tsp vanilla

In a small bowl make a paste of milk, sugar, salt and flour.  Set aside. 
In a double boiler combine the chocolate pieces and evaporated milk.
Stir with a wooden spoon until the chocolate has melted. 
Add the paste to the heated chocolate mixture and cook until thickened, about 10 minutes. 
Stir in the slightly beaten egg to chocolate mixture at the last minute when it is still cooking in the double boiler. 
Remove from heat and stir in vanilla. 
Pour into a clear glass bowl or individual serving dishes. 
Refrigerate for several hours before serving.

Makes 4 - 6 servings.
