Purdy’s Chocolate Mousse


3.5  Purdy’s Classic  Dark Chocolate Bars
1 tbsp instant coffee
3 tbsp butter
6 eggs, separated
1/2 cup heavy cream
5 tbsp sugar

Melt chocolate and coffee in the top of a double-boiler over hot (not boiling) water. 
Add butter and stir until melted. 
In a separate bowl, beat egg yolks until very light. 
Add a little of the chocolate mixture into the egg yolks and blend with a wire whisk. 
Combine with remaining chocolate and continue blending in double-boiler for a few minutes until smooth. 
Let mixture cool. 
Whip the cream and add sugar. 
Beat the egg whites until very stiff. 
Gently fold whipped cream and egg whites into the chocolate mixture. 
Spoon into serving dishes and chill. 
When ready to serve, garnish with whipped cream and Purdy’s chocolate shavings.
