White Chocolate Decadence

Ingredients:

For the cake

  • 1 3/4 Purdys' Classic White Chocolate bars, chopped
  • 1 1/4 cups flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 75ml buttermilk
  • 1/4 cup butter, softened
  • 4 large egg whites
  • 1 tsp vanilla

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Coat 1, 6 inch cake pan with non-stick cooking spray and lightly flour.
  3. Line bottom of pan with parchment then spray and flour again.
  4. In heatproof bowl, melt white chocolate in microwave at 15 second intervals, until half of chocolate is melted.
  5. Stir in between each interval and set aside.
  6. Combine flour, sugar, salt, baking soda, buttermilk and butter in large bowl.
  7. Mix on low speed with electric mixer until all dry ingredients are completely moistened.
  8. Stir in melted chocolate.
  9. Beat egg whites in clean, dry bowl until stiff peaks form.
  10. Gently fold batter into egg whites.
  11. Spread evenly in cake pan.
  12. Tap on counter to remove any air bubbles.
  13. Bake for 20 to 30 minutes or until toothpick comes out clean.
  14. In heatproof bowl, melt white chocolate in microwave at 15 second intervals, until half of chocolate is melted.
  15. Stir in between each interval and set aside.
  16. Beat softened cream cheese in large bowl until smooth.
  17. Gradually beat in melted chocolate.
  18. Add butter and vanilla and blend thoroughly until smooth.
  19. Ice cooled cake and top with dark chocolate shavings.
