Hedgehog Mason Jar Microwave Cake

TIP: For extra hazelnut flavour, try it with Hedgehogs instead of Minis.

  • 1/4 cup all-purpose flour
  • 3 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 3 tbsp granulated sugar
  • 1/8 tsp salt
  • 1/3 cup milk
  • 2 tbsp vegetable oil
  • Mini Hedgehog (optional: extra as topping)
  1. In small bowl, whisk together dry ingredients.
  2. In separate bowl, whisk together milk and vegetable oil.
  3. Whisk together wet and dry ingredients, then pour batter into a 250 ml wide-mouth mason jar.
  4. Place a Mini Hedgehog on top of the batter (it'll sink during cooking process).
  5. Place a paper towel in the microwave. Set the jar on top to catch any spills.
  6. Microwave batter for 2 minutes on high.
  7. Carefully remove mason jar cake from microwave with heat-proof gloves.
  8. Optional: Top with whipping cream, chocolate shavings and another Mini Hedgehog!
