For Mole Sauce:
- 2 tbsp olive oil
- 1 tsp coriander
- 2 medium white onions
- 1 jalapeno
- 2 red chilis
- 4 cloves garlic
- 1 banana
- 1/2 cup brown sugar
- 1 can (796ml) of diced tomatoes
- 1 tsp cumin
- 1 tsp cinnamon
- 1/2 cup raisins
- 1/2 cup pepitas (hulled pumpkin seeds)
- 1/2 cup peanuts
- 1/2 cup almonds
- 1 cup Classic Dark Chocolate, chopped
For Pickled Onions:
- 1 red onion
- 2 cups apple cider
- 4 tbsp sugar
