Cocoa Nibs Crusted Pork Tenderloin

For the tenderloin rub

  • 1 pork tenderloin
  • 2 tbsp cocoa nibs
  • 3 tbsp brown sugar
  • 1 tsp cumin
  • 1/4 tsp sea salt
  • 1/4 tsp freshly cracked black pepper

For the sauce

  • 12 almonds, toasted
  • 1/2 bunch cilantro
  • 1 cup tomatillos
  • 1/2 jalapeno pepper, deveined and deseeded
  • 2 cloves garlic
  • 1/2 lime
  • 2 tbsp olive oil
  • 1 tsp salt
  • 50 g White Chocolate Classic Bar, chopped
